Their AI-driven robot, Poseidon, automates the traditional Japanese ikejime method of killing fish, enhancing flavor, texture, and shelf life. The company aims to make high-quality fish available to Americans, with four Poseidons already working on ships in the Pacific and Atlantic, and plans to have 10 more in the coming year.
